Today we bring you our traditional pumpkin pudding recipe. Just like our grandparents, we make it with the best natural ingredients. It is important to choose them carefully, so that the pumpkin pudding lasts longer and tastes and looks great!
Besides giving a very characteristic colour, flavour and smell to pumpkin pudding, fine smoked paprika helps drying and preserving the nutrients of its ingredients. Our smoked paprika has a very high content of carotenoids and a very low water content, which make it excellent to prepare cold meats.
You must know that the Spanish Pumpkin Pudding contains meat!
Ingredients for one pumpkin pudding
- 1 Kg pumpkin
- 300 g of bacon
- 1 onion
- 3 garlic cloves
- 22 g of coarse salt
- 20 g of La Ristra’s artisanal Smoked Paprika, Buy it here! (sweet-sour or spicy)
- 1 teaspoon of La Ristra’s Wild Oregano, Buy it here!
- La Ristra’s Smoked Paprika Flakes, Sweet or Spicy!
- Edible vegetable casings
Peel and chop the pumpkin and the onion and boil them for 20 minutes at medium power/gas. Mix them well with a puree machine or a fork and let them drain on a strainer for a day. Smash the garlic cloves, put them in a recipient with the bacon and add the paprika, the oregano, the paprika flakes, and salt. To this mixture, add the puree of pumpkin and onion and mix everything to obtain a homogeneous mass. Let the mass rest in a bowl covered with a dry kitchen towel before the stuffing.
Before stuffing the mass into the vegetable casings, we advise to use edible vegetable casings, which can be bought in vegan shops and butcheries. Make a knot with a cord at the end of the casing and carefully fill it with a spoon avoiding compacting it too much (this is important for the pudding to lose humidity!). Make another knot every 7 – 8 cm (2.7 – 3.5 inches) until you stuff all the mix inside the casing and poke the air bubbles that might have formed, if any.
Finally, hang the pumpkin in a fresh and ventilated place for 15 days and enjoy!
